Steps
- Heat shallow frying pan on medium heat with olive oil covering bottom.
- Season in shallow bowl, add bread crumbs with pepper and salt and some of the parmesan cheese. Mix.
- Press chicken breasts into bread crumb mixture on both sides.
- Brown in frying pan until golden.
- Place on plate with paper towels to drain.
- Spray 9x13 glass baking dish with cooking spray.
- Layer with thin spread of sauce.
- Place one piece of chicken over sauce to fill dish.
- Layer with mozzarella and sprinkle with parmesan.
- Add a second piece of chicken on top.
- Cover with sauce, top with mozzarella and parmesan.
- Bake at 350°F until cheese melted and slightly golden.

- 4 large chicken breasts, trimmed of fat, pounded thin, cut in serving size
- Italian bread crumbs
- parmesan cheese, grated
- mozzarella, sliced or shredded
- olive oil
- salt & pepper
- fresh basil, trimmed of stems and chopped (optional)
