Ingredients
- 2 1/2 lbs chicken chicken breasts
- 1 med onion
- 1 garlic glove
- 2 t salad oil
- 1/4 t ground cumin
- 1 can cream of chicken
- 10 oz. chopped spinach frozen
- 1 pt sour cream 16 oz.
- 8 oz. corn chips
- 1/2 lb shredded monterrey jack cheese
- 1 8 oz. can jalapenos or green chilis

Instructions
- Boil chicken and chop into small pieces.
- Sautee in oil, onion, garlic, and pepper until tender.
- Add cumin, cook 1 minute.
- Stir in soup and spinach.
- Turn to low heat until spinach is cooked.
- Stir in chicken and sour cream. Cook until heated through. Take off heat.
- In casserole dish, layer 1/3 chips, 1/3 cheese, 1/2 of chicken mixture. Repeat for second layer.
- Bake at 350 for 30 minutes or until done.
Recipe Notes
A whole can of jalapenos makes it HOT!
