Aunt Roe’s Beef Stew

A great, hearty meal for a cool day.
Cook Time 3 hours 30 minutes
Servings: 6 people

Ingredients
  

  • 1.75 lbs stew meat
  • 1.5 lbs small yellow potatoes
  • 3 stalks celery sliced
  • 4-5 carrots
  • 2 onions
  • 2 c tomato juice
  • 1/3 c quick cooking tapioca
  • 1 T salt
  • 1 T pepper
  • 1 T sugar
  • 1 t basil

Method
 

  1. Mix all ingredients in dutch oven.
  2. Bake at 300 F for 2.5-3 hours
  3. Add potatoes and cook until tender.

Notes

If desired: add more veggies and increase tomato juice, tapioca and basil accordingly. -Izzie
