Sausage and Peppers

Ingredients
  

  • 1 lb Italian sausage (sweet or hot)
  • 2 medium size green peppers cleaned and sliced
  • 2 medium onions sliced
  • 3 T olive oil
  • 2 T red wine optional
  • garlic salt and oregano to taste (if not authentic sausage)

Method
 

  1. Saute peppers and onions in olive oil until wilted. Remove from frying pan.
  2. Add sausage to pan and cook slowly to brown. Flip over and cook on other side. Add wine, peppers, onions and seasoning (if needed). Continue to cook until sausage is no longer pink and peppers and onions are soft.
  3. For Sandwiches: Soft hoagie rolls, not too thick. Serve with ketchup or condiment of choice, if desired.
