Chicken, Sausage and Potato Bake

Ingredients
  

  • 6 medium potatoes peeled and quartered
  • 1 lb Italian sausage (sweet or hot) cut into 1” pieces
  • 2 lbs boneless chicken breasts cut into 1” pieces
  • 1/3 c good olive oil

Method
 

  1. Mix together in small bowl: 2 t Oregano, 2 t Paprika, and 1 t Garlic Salt.
  2. Spray 9x13 baking dish with non stick spray. Arrange potatoes on bottom of pan. Sprinkle with half of seasoning mix. Arrange chicken and sausage pieces on top. Pour oil over the ingredients and sprinkle with the remaining seasoning mix.
  3. Cover with foil and bake in 425 degree oven for 30 minutes. Reduce heat to 375, remove foil and bake for 45 minutes longer until chicken and saugage are brown.
  4. Serve with crusty bread and light salad.

Notes

I like to use more oil so there is “juice” for the bread.
