Chicken Scampi over Angel Hair
Ingredients
- 1/2 c butter
- 1/4 c olive oil
- 1/4 c green onions
- 1 T minced garlic
- juice of 1 lemon
- 2 lbs chicken breast cut into 1 pieces
- salt and pepper to taste
- 1/4 c minced Italian parsley
- 1 lb angel hair pasta
- parmesan cheese
- mushrooms (optional optional - Kids do not like them
Instructions
- In skillet, melt butter and oil.
- Saute onion and garlic (add fresh mushrooms here).
- Add lemon juice, chicken, salt and pepper, and parsley. Cook until done for about 6 minutes, stirring constantly. Meanwhile cook angel hair pasta.
- Mix pasta with chicken mixture. Serve and top with parmesan cheese
Notes
Can substitute shrimp and adjust the amount of butter and oil used. I like to double for more sauce.
