Aunt Debbie's Merry Christmas Cheesecake

Ingredients
  

  • 1 8 oz pkg cream cheese soft, for filling
  • 1/4 c sugar for filling
  • 1 egg for filling
  • 1 T lemon juice for filling
  • 1/4 c red cherries chopped, glazed - for filling
  • 1/4 c green cherries chopped, glazed - for filling
  • 1/3 c cold butter for crust
  • 1/3 c brown sugar firmly packed - for crust
  • 1 c flour for crust

Method
 

  1. CRUST: In a medium bowl, cut butter in chunks.
  2. Add brown sugar and flour, beat at low speed.
  3. Continue beating at medium speed, scraping sides of bowl often.
  4. Reserve 1/2 c crumb mixture for topping.
  5. Press remaining crumb mixture into an 8" square pan.
  6. Bake at 350ยฐ for 10-12 minutes.
  7. FILLING: Beat cream cheese, sugar, egg, and lemon juice at medium speed until fluffy (1-2 minutes).
  8. Stir in chopped cherries.
  9. Spread filling over crust, sprinkling with remaining crumb mixture.
  10. Bake 18-20 minutes or until filling is set and slightly browned.
  11. Cool.
  12. Store in regrigerator.
