Izzie's Buffalo Wings

Ingredients
  

  • 4 lb chicken wings
  • 2 eggs
  • 2 c peanut oil
  • 3 c cider vinegar
  • 4 1/2 tsp salt
  • 1 onion minced
  • 1/2 tsp red pepper sauce
  • cayenne pepper to taste
  • 1/2 tsp ground red pepper
  • 1/4 tsp celery seed
  • 1.4 tsp nutmeg
  • 1/8 tsp ground cloves
  • 1/2 tsp ground pepper
  • 1 T minced garlic
  • 1/3 c Louisiana hot sauce

Method
 

  1. If fresh wings, cut off tips and discard. Cut remaining wings in half at joint.
  2. In large bowl, beat eggs and all ingredients until blended.
  3. Add wings, cover, and refrigerate for 24 hours.
  4. Preheat oven to 500.
  5. Use disposable foil pans or 9x14 glass pyrex dishes.
  6. Place wings in single layer. Roast 45-60 minutes until crisp, turning wings every 15 minutes and basting with marinage.
  7. Sprinkle with additional cayenne pepper before baking if desired.

Notes

Use all ingredients - it makes a difference! Have ready by the time the Buc game starts. If we lose, at least you've tailgated well. Then, air out your house and clean your oven.
