Jalapeno Chicken

Ingredients
  

  • 2 1/2 lbs chicken chicken breasts
  • 1 med onion
  • 1 garlic glove
  • 2 t salad oil
  • 1/4 t ground cumin
  • 1 can cream of chicken
  • 10 oz. chopped spinach frozen
  • 1 pt sour cream 16 oz.
  • 8 oz. corn chips
  • 1/2 lb shredded monterrey jack cheese
  • 1 8 oz. can jalapenos or green chilis

Method
 

  1. Boil chicken and chop into small pieces.
  2. Sautee in oil, onion, garlic, and pepper until tender.
  3. Add cumin, cook 1 minute.
  4. Stir in soup and spinach.
  5. Turn to low heat until spinach is cooked.
  6. Stir in chicken and sour cream. Cook until heated through. Take off heat.
  7. In casserole dish, layer 1/3 chips, 1/3 cheese, 1/2 of chicken mixture. Repeat for second layer.
  8. Bake at 350 for 30 minutes or until done.

Notes

A whole can of jalapenos makes it HOT!
