Jalapeno Chicken

Ingredients
  

  • 2 1/2 lbs chicken chicken breasts
  • 1 med onion
  • 1 garlic glove
  • 2 t salad oil
  • 1/4 t ground cumin
  • 1 can cream of chicken
  • 10 oz. chopped spinach frozen
  • 1 pt sour cream 16 oz.
  • 8 oz. corn chips
  • 1/2 lb shredded monterrey jack cheese
  • 1 8 oz. can jalapenos or green chilis

Instructions
 

  • Boil chicken and chop into small pieces.
  • Sautee in oil, onion, garlic, and pepper until tender.
  • Add cumin, cook 1 minute.
  • Stir in soup and spinach.
  • Turn to low heat until spinach is cooked.
  • Stir in chicken and sour cream. Cook until heated through. Take off heat.
  • In casserole dish, layer 1/3 chips, 1/3 cheese, 1/2 of chicken mixture. Repeat for second layer.
  • Bake at 350 for 30 minutes or until done.

Notes

A whole can of jalapenos makes it HOT!
