Chicken Divan

Ingredients
  

  • 2-10 oz. pkg frozen broccoli spears or fresh steamed
  • 1/4 cup butter
  • 6 T flour
  • 2 c chicken broth
  • 1/2 c whipping cream
  • 3 T dry white wine
  • 3 large boneless and skinned chicken breasts halved and cooked – 1 hour in 250ยฐ oven or poach and use broth for soup
  • 1/4 c parmesan cheese

Method
 

  1. Cook broccoli and drain.
  2. Melt butter.
  3. Blend in flour, 1/2 tsp salt and pepper to tast, and chicken broth.
  4. Cook and stir until mixture thickens and bubbles.
  5. Stir in cream and wine.
  6. Place broccoli crosswise in 9×12 baking dish.
  7. Pour half the sauce over top with chicken.
  8. To remaining sauce: add cheese.
  9. Pour over chicken.
  10. Sprinkle with added cheese.
  11. Bake at 350ยฐ for 20 minutes.
  12. Broil just until sauce is golden (about 5 minutes).
