Chicken Divan

Ingredients
  

  • 2-10 oz. pkg frozen broccoli spears or fresh steamed
  • 1/4 cup butter
  • 6 T flour
  • 2 c chicken broth
  • 1/2 c whipping cream
  • 3 T dry white wine
  • 3 large boneless and skinned chicken breasts halved and cooked - 1 hour in 250° oven or poach and use broth for soup
  • 1/4 c parmesan cheese

Instructions
 

  • Cook broccoli and drain.
  • Melt butter.
  • Blend in flour, 1/2 tsp salt and pepper to tast, and chicken broth.
  • Cook and stir until mixture thickens and bubbles.
  • Stir in cream and wine.
  • Place broccoli crosswise in 9x12 baking dish.
  • Pour half the sauce over top with chicken.
  • To remaining sauce: add cheese.
  • Pour over chicken.
  • Sprinkle with added cheese.
  • Bake at 350° for 20 minutes.
  • Broil just until sauce is golden (about 5 minutes).
