The one and only.
Steps
In sauce pot, on medium heat, add olive oil to cover bottom.
Brown pork, sausage, and pepperoni. Add olive oil if needed.
Remove from pot and place on plate.
Add garlic and simmer slightly (don’t burn as it will change the flavor).
When sizzling, add ground beef and cook until brown.
Add tomato paste and stir until blended.
Add tomato sauce and stir well.
Add all other meats and oregano. Stir well. Allow to heat until bubbling and reduce heat to low-medium.
Stir frequently and lower heat so as not to burn. You want slight bubbling but you don’t want burning at the bottom of the pan (stirring frequently at this point is important).
Cook this way for a couple hours, stirring frequently.
Reduce heat to low and cover. Check frequently and stir for several hours - total cooking time should be at least 4-5 hours.
May leave overnight after turning burner off.
Reheat next day, then remove sausage, pepperoni, and pork. If not using the sausage and pepperoni for the meal, you can freeze for later use. The pork should be cleaned, then shredded into the sauce.
Use slotted spoon to remove any pork bones - be diligent on this!
Notes
This will make about 10-12 quarts of sauce that you can use for the meal, and freeze or can the remainder.
Ingredients
big stainless steel pot
olive oil
6 large fresh whole garlic, peeled
4-5 large cans of tomato sauce (Sam’s Club large)
4-5 cans tomato paste
2-3 T oregano
2-3 cheap pork steaks or 4 pork neck bones
1 long stick pepperoni, peeled and skin removed and cut into 5-6 pieces
6 lbs ground beef
4 links spicy Italian sausage
