Steps
Mix first 3 ingredients in saucepan.
Cook over medium heat until Hard Crack (300–310°F).
Take off heat and add flavoring and coloring.
Stir well and pour out onto a buttered cookie sheet with sides.
When partially set, start scoring with a buttered knife to make the candy easier to break into pieces.
Notes
Stand far away from mixture when adding the flavoring with an exhaust fan on because cinnamon oil is VERY strong.

2 c sugar
1 c Karo light corn syrup
1 T water
0.5 to 0.75 t flavoring oil, e.g. cinnamon oil
0.5 t food coloring, optional
